Carrot Christmas Pudding

A light, moist and delicious alternative to Christmas Pudding, can be enjoyed any time of the year.

Ingredients

4 oz grated carrot

4 oz grated potato

4 oz sultanas

4 oz raisins

2 oz flour

1 teaspoon baking powder

2 oz melted butter

1 beaten egg

1 teaspoon cinnamon

half teaspoon nutmeg

half teaspoon allspice

Method

Mix the carrot and potato with the dried fruit, sift in the flour, spices and baking powder, then add the melted butter and the egg.  Mix well.  Put in a pudding basin, cover with greaseproof paper and muslin.  Steam for 2 hours. Turn out and serve.
