Apple and Mincemeat Pudding

A sponge based pudding with apples and mincemeat. Ideal for the Christmas season!

Ingredients:

170g Self Raising Flour

3 teaspoons baking powder

150g Caster Sugar

150g Margarine

3 Eggs

140g Mincemeat

2 small eating Apples

1 Tablespoon Brandy

Method:

Stir the Brandy in to the mincemeat and place jn the bottom of a greased 1.1 litre pudding basin. Cream the margarine and sugar together, gradually add the beaten eggs. Sieve the flour and baking powder together and mix into the sugar, margarine and eggs mix. Core and roughly chop apples into 1cm pieces, stir in to the mixture. Add sponge mixture to the bowl, cover securely and steam for 1 ½ hours.
